- 1 cup fresh spinach, wilted and chopped (or ½ cup frozen, thawed & drained)
- ½ cup shredded white cheddar cheese
- 1 garlic clove, minced
- ½ tsp onion powder
- ½ tsp salt
- ½ tsp black pepper
- ¼ tsp smoked paprika
- 1 egg (optional, for binding)
- ¼ cup breadcrumbs (or almond flour for gluten-free)
- 1 tbsp olive oil (for pan-frying)
Instructions
- Prepare the spinach – Lightly sauté or blanch the spinach, then drain and chop it.
- Mix the ingredients – In a bowl, combine ground chicken, spinach, white cheddar, garlic, onion powder, salt, pepper, smoked paprika, egg (if using), and breadcrumbs. Mix gently without overworking.
- Shape the patties – Form into 4 evenly sized patties, pressing a small indentation in the center. Chill for 30 minutes to help them hold their shape.
- Cook the patties:
- Grill: Preheat grill to medium-high heat, oil grates, and cook for 5-6 minutes per side until the internal temp reaches 165°F (74°C).
- Pan-Fry: Heat 1 tbsp olive oil in a skillet over medium heat. Cook patties for 5-6 minutes per side until golden brown and fully cooked.
Assemble & serve – Place on buns or lettuce wraps, add your favorite toppings, and enjoy!
