Ingredients
For the Shrimp:
1 lb large or jumbo shrimp (peeled and deveined; if using frozen, thaw completely and pat very dry)
½ tsp salt
¼ tsp black pepper
1 tbsp unsalted butter or olive oil (for searing)
For the Garlic Butter Sauce:
3 tbsp unsalted butter (substitute plant-based butter or olive oil for dairy-free)
4 cloves fresh garlic, minced
1 tbsp fresh lemon juice
1 tsp lemon zest
Pinch of red pepper flakes (for a subtle kick)
For Garnish:
2 tbsp fresh chopped parsley
Optional Add-ins:
Splash of white wine (add after sautéing garlic for a complex sauce)
Cherry tomatoes or spinach (toss in during the last minute)
Grated Parmesan cheese (stir in at the end for a creamier sauce)
Instructions
1. Prep the shrimp: Pat the shrimp completely dry with paper towels to ensure a good sear. Season them lightly with salt and pepper.
2. Sear the shrimp: Heat 1 tbsp of butter (or olive oil) in a large skillet over medium-high heat. Add the shrimp in a single layer. Cook for 1 to 2 minutes per side until pink and opaque. Remove them from the skillet and set aside.
3. Make the sauce: In the same skillet, reduce the heat to medium. Add the remaining 3 tbsp of butter and the minced garlic. Sauté for 1 minute until fragrant, being careful not to burn the garlic.
4. Combine and finish: Return the shrimp to the skillet. Toss them to coat in the garlic butter sauce. Stir in the lemon juice, lemon zest, and red pepper flakes.
5. Garnish and serve: Remove the pan from the heat. Sprinkle with fresh chopped parsley and serve immediately.
Notes
Dry the Shrimp: Always pat the shrimp dry before cooking. This prevents steaming and ensures a nice sear.
Don’t Overcook: Shrimp cook very quickly and become rubbery if left in the pan too long. They are done when they turn pink and form a loose “C” shape. If they curl into a tight “O”, they are overcooked.
Fresh Garlic: Use fresh garlic instead of pre-minced jarred garlic for a significantly better flavor profile.
Storage & Reheating: Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat gently in a skillet over low heat to prevent the shrimp from becoming tough. Avoid microwaving or freezing, as it ruins the delicate texture.
