Ingredients

For the Salad:

– 2 cups mixed salad greens

– ¼ cup crumbled feta cheese (substitute goat cheese or plant-based cheese for vegan diets)

– ¼ cup thinly sliced red onion

For the Dressing:

– ¼ cup extra virgin olive oil

– 1 tbsp balsamic vinegar

– 1 tsp Dijon mustard

– ¼ tsp salt

– ¼ tsp black pepper


Instructions

  1. Wash mixed salad greens thoroughly under cold water and pat them dry. Place in a large salad bowl.
  2. Rinse blueberries gently in cold water, remove stems or leaves, and set aside to drain.
  3. Chop pistachios into smaller pieces and sprinkle evenly over the greens.
  4. Crumble feta cheese into small pieces and add to the salad.
  5. Peel and slice red onion into thin rings and add to the salad.
  6. In a small bowl, whisk together olive oil, honey, balsamic vinegar, Dijon mustard, salt, and black pepper until well emulsified.
  7. Pour the dressing evenly over the salad. Toss gently with tongs until all ingredients are lightly coated. Taste and adjust seasoning if necessary.
