Description

For the Enchiladas:
6 scrambled eggs
1 pound crumbled sausage (substitute turkey sausage or plantbased crumbles for variety)
2 cups shredded cheese (e.g., cheddar or Monterey Jack)
1 cup hash browns (fresh or frozen; thaw and pat dry if frozen)
4 tortillas (use glutenfree tortillas if needed)

For the Sausage Gravy:
½ pound sausage (substitute turkey sausage or plantbased sausage for variety)
2 tbsp flour
2 cups milk

Optional Garnishes:
Fresh herbs (e.g., parsley or cilantro)
Extra shredded cheese


Instructions

1. Scramble eggs in a large skillet over medium heat for about 5 minutes. Add cooked sausage, cheese, and hash browns, mixing until the cheese is melted.
2. Spoon a generous amount of the filling onto the center of each tortilla, roll it up tightly, and place seamside down in a greased 9x13inch baking dish.
3. In a medium saucepan, brown sausage over medium heat. Stir in flour, then gradually whisk in milk, allowing it to simmer until thickened.
4. Preheat the oven to 350°F. Pour the gravy over the assembled enchiladas, cover with foil, and bake for 25 minutes.
5. Remove the foil and bake for another 10 minutes until bubbly and golden. Let cool for a few minutes before serving, garnishing with fresh herbs or extra cheese if desired.
