Description

Broccoli salad is a vibrant, crunchy salad featuring thinly sliced broccoli florets, toasted sunflower seeds, red onion, dried cranberries, and a tangy honey mustard dressing for a sweet-and-savory side dish or light meal. – ½ cup raw sunflower seeds or slivered almonds (toasted)

– ½ cup finely chopped red onion

– ½ cup grated sharp cheddar cheese (optional; omit for vegan diets)

– ⅓ cup dried cranberries or tart cherries, chopped

For the Dressing:

– ⅓ cup extra-virgin olive oil

– 2 tbsp apple cider vinegar (substitute balsamic vinegar or lemon juice if needed)

– 1 tbsp Dijon mustard

– 1 tbsp honey (substitute maple syrup or agave nectar for vegan diets)

– 1 medium clove garlic, pressed or minced

– ¼ tsp fine sea salt (adjust to taste)


Instructions

  1. Pour sunflower seeds into a skillet over medium heat. Cook, stirring frequently, until golden, about 5 minutes. Transfer to a large serving bowl.
  2. Add chopped broccoli, red onion, cheese (if using), and cranberries to the bowl with the toasted seeds. Set aside.
  3. In a small bowl or measuring cup, whisk together olive oil, apple cider vinegar, Dijon mustard, honey, garlic, and salt until smooth and well blended.
  4. Pour the dressing over the salad mixture. Stir until all ingredients are lightly coated.
  5. Let the salad marinate for at least 20 minutes, or overnight in the fridge, for enhanced flavor.
  6. Divide the salad into individual bowls and serve chilled or at room temperature.

Notes

– Use fresh broccoli for maximum crunch and flavor. Substitute plant-based ingredients for vegan diets.
