Perfect for picnics, potlucks, or as a homemade dish to elevate any meal. Easily paired with grilled meats, sandwiches, or roasted vegetables.
Ingredients
Ingredients
For the Salad:
– 1 pound broccoli florets, thinly sliced and roughly chopped
– ½ cup raw sunflower seeds or slivered almonds (toasted)
– ½ cup finely chopped red onion
– ½ cup grated sharp cheddar cheese (optional; omit for vegan diets)
– ⅓ cup dried cranberries or tart cherries, chopped
For the Dressing:
– ⅓ cup extra-virgin olive oil
– 2 tbsp apple cider vinegar (substitute balsamic vinegar or lemon juice if needed)
– 1 tbsp Dijon mustard
– 1 tbsp honey (substitute maple syrup or agave nectar for vegan diets)
– 1 medium clove garlic, pressed or minced
– ¼ tsp fine sea salt (adjust to taste)
Instructions
- Pour sunflower seeds into a skillet over medium heat. Cook, stirring frequently, until golden, about 5 minutes. Transfer to a large serving bowl.
- Add chopped broccoli, red onion, cheese (if using), and cranberries to the bowl with the toasted seeds. Set aside.
- In a small bowl or measuring cup, whisk together olive oil, apple cider vinegar, Dijon mustard, honey, garlic, and salt until smooth and well blended.
- Pour the dressing over the salad mixture. Stir until all ingredients are lightly coated.
- Let the salad marinate for at least 20 minutes, or overnight in the fridge, for enhanced flavor.
- Divide the salad into individual bowls and serve chilled or at room temperature.
Notes
– Use fresh broccoli for maximum crunch and flavor. Substitute plant-based ingredients for vegan diets.
– Store leftovers in an airtight container in the fridge for up to 3–4 days. Avoid freezing, as this salad does not freeze well due to its fresh ingredients.
