Burrata salad is a vibrant, creamy salad featuring burrata cheese, mixed greens, fresh vegetables, herbs, and a zesty lemon-olive oil dressing for a light yet indulgent meal. Ingredients
For the Salad:
– 6–8 cups mixed greens lettuce
– 1 English cucumber, sliced
– 5 campari tomatoes, quartered or chopped
– ½ cup Kalamata olives, pitted and halved (substitute black olives or capers if needed)
– ⅓ small red onion, thinly sliced
– 8 oz burrata cheese, broken into pieces
For the Herbs:
– 1 cup fresh chopped basil
– ⅓ cup fresh chopped dill
For Toasted Pita Chips:
– 2 slices pita bread, broken into bite-sized pieces
– 3 tbsp olive oil
– ½ tsp sumac (optional)
For the Dressing:
– ⅓ cup extra virgin olive oil
– Zest and juice from 1 lemon
– Sea salt or flake salt to taste
Instructions
- Break pita bread into bite-sized pieces. Heat olive oil in a pan until shimmering, then fry the pita pieces briefly until golden brown, tossing frequently. Transfer to a paper towel-lined plate, season with salt and sumac (if using), and set aside.
- In a large bowl, layer mixed greens, cucumber slices, tomatoes, olives, and red onion. Tear or cut burrata into pieces and arrange on top.
- Sprinkle with fresh basil and dill.
- In a small bowl, whisk together lemon zest, lemon juice, and extra virgin olive oil. Drizzle the dressing over the salad and sprinkle with sea salt or flake salt.
- Top the salad with toasted pita chips and serve immediately.
