Description

Burrata salad is a vibrant, creamy salad featuring burrata cheese, mixed greens, fresh vegetables, herbs, and a zesty lemon-olive oil dressing for a light yet indulgent meal. Perfect for summer gatherings, picnics, or as a homemade dish to elevate any occasion. Easily paired with grilled meats, seafood, or crusty bread.


Ingredients

For the Salad:

– 6–8 cups mixed greens lettuce

– 1 English cucumber, sliced

– 5 campari tomatoes, quartered or chopped

– ½ cup Kalamata olives, pitted and halved (substitute black olives or capers if needed)

– ⅓ small red onion, thinly sliced

– 8 oz burrata cheese, broken into pieces

For the Herbs:

– 1 cup fresh chopped basil

– ⅓ cup fresh chopped dill

For Toasted Pita Chips:

– 2 slices pita bread, broken into bite-sized pieces

– 3 tbsp olive oil

– ½ tsp sumac (optional)

For the Dressing:

– ⅓ cup extra virgin olive oil

– Zest and juice from 1 lemon

– Sea salt or flake salt to taste


Instructions

  1. Break pita bread into bite-sized pieces. Heat olive oil in a pan until shimmering, then fry the pita pieces briefly until golden brown, tossing frequently. Transfer to a paper towel-lined plate, season with salt and sumac (if using), and set aside.
  2. In a large bowl, layer mixed greens, cucumber slices, tomatoes, olives, and red onion. Tear or cut burrata into pieces and arrange on top.
  3. Sprinkle with fresh basil and dill.
  4. In a small bowl, whisk together lemon zest, lemon juice, and extra virgin olive oil. Drizzle the dressing over the salad and sprinkle with sea salt or flake salt.
  5. Top the salad with toasted pita chips and serve immediately.

Notes

– Use fresh, high-quality burrata for maximum creaminess. Substitute plant-based ingredients for vegan diets.

– Store components separately in the fridge for up to 1 day (without dressing and pita chips). Avoid freezing, as this salad does not freeze well due to its fresh ingredients.
