Quick Cottage Cheese Microwave Brownie

  • Author: Leslie Bennett
  • Total Time: 7–25 minutes
  • Yield: 1–2 servings

Description

Quick cottage cheese microwave brownie is a guilt-free, protein-packed brownie made with cottage cheese, cocoa powder, protein powder, and minimal sugar substitutes, cooked in minutes using a microwave. Perfect for quick snacks, desserts, or as a homemade treat that satisfies sweet cravings without compromising health goals. Easily paired with toppings like whipped cream, fresh berries, or nut butter.

Ingredients

For the Brownie:

– ½ cup full-fat cottage cheese (substitute Greek yogurt or ricotta cheese if needed)

– 1 scoop chocolate protein powder (substitute peanut butter or vanilla protein powder for variety)

– 2 tbsp cocoa powder

– 2 tsp sugar substitute (substitute stevia, monk fruit, or regular sugar if needed)

– 1 tsp baking powder

– Pinch of salt

– 1–2 fl oz milk (dairy or almond milk; adjust for desired consistency)

Optional Toppings:

– Whipped cream

– Fresh berries

– Nut butter

– Sea salt

– Crushed nuts

Instructions

  1. Collect all ingredients: cottage cheese, protein powder, cocoa powder, sweetener, baking powder, salt, and milk. Ensure everything is ready for a smooth process.
  2. Add all ingredients to a blender or food processor. Blend until smooth. If the mixture is too thick, gradually add more milk until you achieve a thick but not soupy consistency.
  3. Optionally coat a microwave-safe bowl with cooking spray for easy removal.
  4. Pour the blended mixture into the prepared bowl.
  5. Microwave on high for 1–2 minutes, watching closely to prevent overcooking. Alternatively, bake at 350°F (176°C) for 15–20 minutes.
  6. Allow the brownie to cool slightly before serving. Add toppings like whipped cream, berries, or nut butter if desired.

Notes

– Use full-fat cottage cheese for a creamier texture. Substitute plant-based ingredients for vegan diets.

– Store leftovers in an airtight container in the fridge for up to 3–4 days. Freeze slices for longer storage; thaw overnight in the fridge before reheating. Avoid microwaving for too long to preserve texture.
