Ingredients
For the Filling:
– 1 diced tomato
– ⅓ cup diced red onion
– 1 cup chopped spinach

– 1 cup shredded mozzarella cheese
For the Base:
– 3 burrito-style tortillas (substitute gluten-free tortillas if needed)

Instructions
- In a bowl, combine diced tomato, diced red onion, chopped spinach, feta cheese, and shredded mozzarella cheese. Mix well.
- Place ⅓ of the filling on one side of each tortilla. Fold the tortilla in half to enclose the filling.
- Heat a small amount of oil in a large flat pan or on a griddle over medium heat.
- Transfer the tortillas to the pan and cook for 3–4 minutes on each side, pressing down with a spatula, until each side is lightly browned and the cheese is melted.
- Cut each quesadilla into 4 slices and serve with your choice of toppings, such as sour cream, salsa, or pico de gallo.
