Description

Mediterranean quesadillas are a creative twist on traditional quesadillas, featuring Mediterranean-inspired ingredients like diced tomatoes, red onions, spinach, feta cheese, and mozzarella for a flavorful and satisfying meal. Perfect for casual dinners, quick lunches, or as a homemade dish that feeds a crowd. Easily paired with dips, salads, or soups for added variety.


Ingredients

For the Filling:

– 1 diced tomato

– ⅓ cup diced red onion

– 1 cup chopped spinach

– ½ cup feta cheese (substitute ricotta, goat cheese, or paneer for variety)

– 1 cup shredded mozzarella cheese

For the Base:

– 3 burrito-style tortillas (substitute gluten-free tortillas if needed)

Optional Toppings:

– Sour cream, salsa, pico de gallo, guacamole, or Greek yogurt


Instructions

  1. In a bowl, combine diced tomato, diced red onion, chopped spinach, feta cheese, and shredded mozzarella cheese. Mix well.
  2. Place ⅓ of the filling on one side of each tortilla. Fold the tortilla in half to enclose the filling.
  3. Heat a small amount of oil in a large flat pan or on a griddle over medium heat.
  4. Transfer the tortillas to the pan and cook for 3–4 minutes on each side, pressing down with a spatula, until each side is lightly browned and the cheese is melted.
  5. Cut each quesadilla into 4 slices and serve with your choice of toppings, such as sour cream, salsa, or pico de gallo.

Notes

– Use fresh, high-quality ingredients for maximum flavor. Substitute plant-based ingredients for vegan diets.

– Store leftovers in an airtight container in the fridge for up to 3–5 days. Freeze portions in freezer-safe containers for up to 1 month. Reheat in the oven or microwave.
