Ingredients
For the Bread:
– 6 egg whites, room temperature
– ½ tsp white vinegar
– 1 tbsp Allulose (optional; omit for completely sugar-free)
– 6 egg yolks, room temperature
– 4 oz full-fat cottage cheese
– ¼ tsp salt
– ¼ cup egg white protein powder
– ¾ cup whey protein powder (substitute soy or pea protein if needed)
– ½ tsp baking powder
– 1 tsp vanilla extract (optional)
Optional Topping:
– Everything bagel seasoning
Instructions
- Preheat oven to 300°F (150°C). Line a 5″x9″ loaf pan with parchment paper and grease it lightly (or use a baking sheet for rolls).
- Place egg whites and vinegar in a stand mixer or use an electric hand mixer. Whip on high speed until stiff peaks form (about 10–15 minutes). Set aside.
- In a separate bowl, whisk together egg yolks, cottage cheese, baking powder, salt, whey protein powder, egg white protein powder, Allulose (if using), and vanilla extract (if using). Blend until smooth.
- Gently fold a small amount of the egg yolk mixture into the whipped egg whites, incorporating gradually to maintain airiness.
- Pour the mixture into the prepared loaf pan (or scoop onto the baking sheet for rolls). Sprinkle with everything bagel seasoning if desired.
- Bake for 50 minutes, or until a toothpick comes out clean and the top is golden brown.
- Turn off the oven but leave the bread inside with the door closed for 10 minutes.
- Remove, slice, and serve with your favorite toppings.
