Description

Fluffy keto cottage cheese cloud bread is a light, airy, and keto-friendly bread alternative made with whipped egg whites, cottage cheese, and protein powders for a fluffy texture and satisfying flavor. Perfect for low-carb diets, breakfast, or as a homemade substitute for traditional bread. Easily paired with sweet toppings like butter and jam or savory options like avocado and smoked salmon.


Ingredients

For the Bread:

– 6 egg whites, room temperature

– ½ tsp white vinegar

– 1 tbsp Allulose (optional; omit for completely sugar-free)

– 6 egg yolks, room temperature

– 4 oz full-fat cottage cheese

– ¼ tsp salt

– ¼ cup egg white protein powder

– ¾ cup whey protein powder (substitute soy or pea protein if needed)

– ½ tsp baking powder

– 1 tsp vanilla extract (optional)

Optional Topping:

– Everything bagel seasoning


Instructions

  1. Preheat oven to 300°F (150°C). Line a 5″x9″ loaf pan with parchment paper and grease it lightly (or use a baking sheet for rolls).
  2. Place egg whites and vinegar in a stand mixer or use an electric hand mixer. Whip on high speed until stiff peaks form (about 10–15 minutes). Set aside.
  3. In a separate bowl, whisk together egg yolks, cottage cheese, baking powder, salt, whey protein powder, egg white protein powder, Allulose (if using), and vanilla extract (if using). Blend until smooth.
  4. Gently fold a small amount of the egg yolk mixture into the whipped egg whites, incorporating gradually to maintain airiness.
  5. Pour the mixture into the prepared loaf pan (or scoop onto the baking sheet for rolls). Sprinkle with everything bagel seasoning if desired.
  6. Bake for 50 minutes, or until a toothpick comes out clean and the top is golden brown.
  7. Turn off the oven but leave the bread inside with the door closed for 10 minutes.
  8. Remove, slice, and serve with your favorite toppings.
