Description

Lasagna soup is a hearty, comforting soup inspired by traditional lasagna, combining savory meat, rich marinara sauce, tender pasta, and creamy cheese for a satisfying meal. Perfect for weeknight dinners, casual gatherings, or as a homemade dish that feeds a crowd. Easily paired with garlic bread, crusty rolls, or fresh salads.


Ingredients

For the Soup:

– ½ pound lean ground beef

– ½ pound ground Italian sausage

– Salt and pepper to taste

– 1 yellow onion, chopped

– 1 tbsp olive oil

– 3 cloves garlic, minced

– 2 tbsp tomato paste

– 24 oz homemade marinara sauce (or store-bought)

– ¼ tsp red pepper flakes

– 2 tbsp fresh parsley, chopped (or 2 tsp dried)

– ½ tsp dried oregano

– 1 tsp dried basil

– 7 cups low-sodium chicken broth

– 9 broken lasagna noodles (substitute gluten-free pasta if needed)

– 2 cups fresh spinach leaves (optional)

For the Cheese Topping:

– 10 oz ricotta cheese (substitute cottage cheese or blended cashews for vegan diets)

– 1 cup shredded mozzarella cheese

– ½ cup freshly grated Parmesan cheese

– Fresh basil, for garnish


Instructions

  1. In a large pot over medium-high heat, cook ground beef and sausage until browned. Season with salt and pepper, then drain grease and remove meat from the pot.
  2. Heat olive oil in the same pot over medium heat. Add diced onion and sauté for 5 minutes, stirring occasionally. Add minced garlic and cook for another 1–2 minutes.
  3. Stir in tomato paste, marinara sauce, spices, and broth. Return the cooked meat to the pot. Bring to a boil.
  4. Add broken lasagna noodles to the pot, reduce heat to medium-low, and cook until tender, stirring occasionally. Add spinach if using.
  5. In a small bowl, combine ricotta, mozzarella, and Parmesan cheeses.
  6. Ladle the hot soup into bowls and top each serving with a dollop of the cheese mixture. Garnish with fresh basil.

Notes

– Use high-quality marinara sauce for maximum flavor. Substitute plant-based ingredients for vegan diets.

– Store leftovers in an airtight container in the fridge for up to 3–4 days. Freeze portions without cheese for longer storage; thaw overnight in the fridge before reheating. Avoid microwaving to preserve texture.
