Description
Lasagna soup is a hearty, comforting soup inspired by traditional lasagna, combining savory meat, rich marinara sauce, tender pasta, and creamy cheese for a satisfying meal. Perfect for weeknight dinners, casual gatherings, or as a homemade dish that feeds a crowd. Easily paired with garlic bread, crusty rolls, or fresh salads.
Ingredients
For the Soup:
– ½ pound lean ground beef
– ½ pound ground Italian sausage
– Salt and pepper to taste
– 1 yellow onion, chopped
– 1 tbsp olive oil
– 3 cloves garlic, minced
– 2 tbsp tomato paste
– 24 oz homemade marinara sauce (or store-bought)
– ¼ tsp red pepper flakes
– 2 tbsp fresh parsley, chopped (or 2 tsp dried)
– ½ tsp dried oregano
– 1 tsp dried basil
– 7 cups low-sodium chicken broth
– 9 broken lasagna noodles (substitute gluten-free pasta if needed)
– 2 cups fresh spinach leaves (optional)
For the Cheese Topping:
– 10 oz ricotta cheese (substitute cottage cheese or blended cashews for vegan diets)
– 1 cup shredded mozzarella cheese
– ½ cup freshly grated Parmesan cheese
– Fresh basil, for garnish
Instructions
- In a large pot over medium-high heat, cook ground beef and sausage until browned. Season with salt and pepper, then drain grease and remove meat from the pot.
- Heat olive oil in the same pot over medium heat. Add diced onion and sauté for 5 minutes, stirring occasionally. Add minced garlic and cook for another 1–2 minutes.
- Stir in tomato paste, marinara sauce, spices, and broth. Return the cooked meat to the pot. Bring to a boil.
- Add broken lasagna noodles to the pot, reduce heat to medium-low, and cook until tender, stirring occasionally. Add spinach if using.
- In a small bowl, combine ricotta, mozzarella, and Parmesan cheeses.
- Ladle the hot soup into bowls and top each serving with a dollop of the cheese mixture. Garnish with fresh basil.
Notes
– Use high-quality marinara sauce for maximum flavor. Substitute plant-based ingredients for vegan diets.
– Store leftovers in an airtight container in the fridge for up to 3–4 days. Freeze portions without cheese for longer storage; thaw overnight in the fridge before reheating. Avoid microwaving to preserve texture.
