Description

Mexican breakfast quesadillas are a savory breakfast dish featuring scrambled eggs, cheese, ham, spinach, tomatoes, and optional toppings like avocado or salsa, perfect for brunch, family meals, or as a quick homemade treat. Ingredients

For the Dish:

– 3 large eggs

– Salt and pepper (to taste)

– 1 tbsp butter

– ⅓ cup chopped onion

– 2 slices chopped ham (optional; substitute grilled chicken, turkey, or chorizo for variety)

– ½ cup coarsely chopped spinach

– ½ small tomato, seeded and chopped

– 2 flour tortillas (regular or whole-wheat; substitute corn tortillas for gluten-free diets)

– ½ cup shredded cheese (e.g., cheddar, Monterey Jack, or a blend)

Optional Toppings:

– Yogurt, avocado slices, pico de gallo, or sliced jalapeños


Instructions

  1. In a bowl, whisk together eggs, salt, and pepper. Set aside.
  2. Heat a frying pan over medium heat. Add a splash of olive oil and cook the ham for about 1 minute.
  3. Add eggs and scramble until starting to set, about 20 seconds.
  4. Add spinach and tomato, cooking until eggs are just cooked but still moist, about 1 minute more. Remove from heat.
  5. Warm another frying pan over medium heat. Place a tortilla in the hot pan and heat for 1 minute.
  6. Flip the tortilla, sprinkle half the cheese on one side, and top with half the egg mixture. Fold the tortilla over to cover the filling.
  7. Cook until lightly browned on both sides, about 1–2 minutes per side. Repeat for the second quesadilla.
  8. Cut the quesadillas into wedges. Top with yogurt, avocado slices, pico de gallo, or other desired toppings. Serve immediately.
