Ingredients

– ½ small tomato, seeded and chopped

– Yogurt, avocado slices, pico de gallo, or sliced jalapeños
Instructions
- In a bowl, whisk together eggs, salt, and pepper. Set aside.
- Heat a frying pan over medium heat. Add a splash of olive oil and cook the ham for about 1 minute.
- Add eggs and scramble until starting to set, about 20 seconds.
- Add spinach and tomato, cooking until eggs are just cooked but still moist, about 1 minute more. Remove from heat.
- Warm another frying pan over medium heat. Place a tortilla in the hot pan and heat for 1 minute.
- Flip the tortilla, sprinkle half the cheese on one side, and top with half the egg mixture. Fold the tortilla over to cover the filling.
- Cook until lightly browned on both sides, about 1–2 minutes per side. Repeat for the second quesadilla.
- Cut the quesadillas into wedges. Top with yogurt, avocado slices, pico de gallo, or other desired toppings. Serve immediately.
