Ingredients
For the Dish:
– Small potatoes or 1 large russet potato, peeled and cubed
– ¼ cup avocado, vegetable, or canola oil
– ⅓ cup chopped onions
– ¼ cup Anaheim chile, jalapeño, or serrano (substitute bell peppers for milder flavor)
– 4 large eggs

Instructions
- Place cubed potatoes in a saucepan and cover with water. Cook on medium-high heat for about 5 minutes until slightly softened. Drain and pat dry with paper towels to prevent oil splatter.
- Heat oil in a skillet over medium-high heat. Add parboiled potatoes and fry, stirring often, until golden brown and crispy. Remove excess oil.
- Crack eggs into a bowl, season with salt and pepper, and whisk until fluffy. Set aside.
- In the same skillet, sauté onions and chiles until onions are translucent. Lower heat to medium-low.
- Add whisked eggs to the skillet with potatoes and vegetables. Stir continuously with a spatula until eggs are set but still soft, about 2–4 minutes.
- Serve immediately with corn or flour tortillas, toast, or fresh salsa.
