Description

Papas con huevos is a hearty, flavorful combination of crispy potatoes, scrambled eggs, onions, and chiles, perfect for breakfast, brunch, or as a quick homemade meal. Easily paired with tortillas, toast, or fresh salsa for added variety.


Ingredients

For the Dish:

– Small potatoes or 1 large russet potato, peeled and cubed

– ¼ cup avocado, vegetable, or canola oil

– ⅓ cup chopped onions

– ¼ cup Anaheim chile, jalapeño, or serrano (substitute bell peppers for milder flavor)

– 4 large eggs

– ¼ tsp kosher salt (adjust to taste)

– Ground black pepper (to taste)

Optional Add-ins:

– Fresh cilantro, diced tomatoes, or shredded cheese


Instructions

  1. Place cubed potatoes in a saucepan and cover with water. Cook on medium-high heat for about 5 minutes until slightly softened. Drain and pat dry with paper towels to prevent oil splatter.
  2. Heat oil in a skillet over medium-high heat. Add parboiled potatoes and fry, stirring often, until golden brown and crispy. Remove excess oil.
  3. Crack eggs into a bowl, season with salt and pepper, and whisk until fluffy. Set aside.
  4. In the same skillet, sauté onions and chiles until onions are translucent. Lower heat to medium-low.
  5. Add whisked eggs to the skillet with potatoes and vegetables. Stir continuously with a spatula until eggs are set but still soft, about 2–4 minutes.
  6. Serve immediately with corn or flour tortillas, toast, or fresh salsa.

Notes
