Description

Peach salad is a vibrant, nutrient-packed salad featuring fresh peaches, creamy avocado, spinach, feta cheese, pecans, and a tangy honey-red wine vinaigrette for a satisfying meal. Ingredients

For the Salad:

– 3 cups spinach, slightly chopped

– 3 large peaches, sliced (substitute frozen peaches if needed; thaw and pat dry)

– 1 avocado, sliced

– ¼ cup crumbled feta cheese (substitute goat cheese or ricotta salata for variety)

– 2 tbsp chopped pecans (substitute walnuts or almonds if needed)

– ¼ cup fresh basil leaves, torn or chopped

For the Dressing:

– ¼ cup olive oil

– 2 tbsp red wine vinegar (substitute balsamic vinegar or lemon juice if needed)

– 1 tbsp honey (substitute stevia or monk fruit for low-sugar diets)

– ¼ tsp salt

– ¼ tsp black pepper


Instructions

  1. In a small bowl, whisk together olive oil, red wine vinegar, honey, salt, and black pepper until smooth. Set aside.
  2. Create a bed of spinach in a large bowl. Arrange sliced peaches and avocado on top.
  3. Sprinkle crumbled feta cheese and chopped pecans over the salad.
  4. Tear or chop fresh basil leaves and sprinkle them over the salad.
  5. Drizzle the dressing over the salad just before serving. Toss gently to combine if desired.
