Description

Radicchio salad is a vibrant, slightly bitter salad featuring radicchio, romaine, baby arugula, grapefruit, shallots, pistachios, mint, and shaved Parmesan cheese, tossed with a tangy balsamic vinaigrette. Perfect for dinner parties, holiday meals, or as a homemade dish that elevates any occasion. Easily paired with grilled proteins, roasted vegetables, or crusty bread.


Ingredients

For the Salad:

– 1 head radicchio, cored and leaves separated

– 1 romaine heart, chopped

– 3 cups baby arugula

– 1 large grapefruit (red or pink) or 2 oranges, peeled and cut into wedges

– 1 shallot, thinly sliced

– 1 cup pistachios, chopped (substitute walnuts or almonds if needed)

– ¼ cup fresh mint leaves, finely chopped

– 1 cup freshly shaved Parmesan cheese (omit for vegan diets)

For the Dressing:

– ⅓ cup extra virgin olive oil

– ¼ cup balsamic vinegar (substitute red wine vinegar or champagne vinegar if needed)

– 1 tsp Dijon mustard

– ¼ tsp sea salt

– ¼ tsp freshly ground black pepper


Instructions

  1. Cut radicchio into quarters, remove the core, and separate the leaves. Soak in ice water for 15 minutes to reduce bitterness, then dry using a salad spinner or paper towels.
  2. Slice off the top and bottom of the grapefruit, then use a knife to peel it by following the curve of the fruit. Cut into wedges.
  3. In a small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, sea salt, and black pepper. Set aside.
  4. In a large bowl, combine radicchio, romaine, and baby arugula. Toss with desired amount of dressing.
  5. Top with grapefruit wedges, shallots, pistachios, mint, and shaved Parmesan cheese. Serve immediately.

Notes

– Use fresh, high-quality radicchio for maximum crunch and flavor. Substitute plant-based ingredients for vegan diets.

– Store components separately in the fridge for up to 1–2 days (without dressing). Avoid freezing, as this salad does not freeze well due to its fresh ingredients.
