Description

Rotel dip is a creamy, cheesy dip featuring ground beef or sausage, diced tomatoes with chilies (Rotel), and processed cheese for a crowd-pleasing appetizer perfect for parties, game days, or casual gatherings. Easily paired with tortilla chips, crackers, or as a topping for nachos or baked potatoes.


Ingredients

For the Dip:

– 1 pound lean ground beef or mild/hot sausage (substitute plant-based meat for vegan diets)

– 16 oz processed cheese loaf such as Velveeta (substitute cream cheese + sharp cheddar or low-sodium alternatives for dietary needs)

– 10 oz canned diced tomatoes with chilies (such as Rotel, with juices; substitute fresh diced tomatoes if needed)

– ½ tsp chili powder (optional)

Optional Add-ins:

– Diced jalapenos

– Black beans, corn, or diced bell peppers

– Taco seasoning or hot sauce


Instructions

  1. In a large skillet, cook lean ground beef or sausage over medium-high heat until no pink remains. Drain excess fat.
  2. Reduce the heat to medium. Add processed cheese, Rotel tomatoes with juices, and chili powder (if using). Stir continuously until the cheese has melted and the dip is smooth.
  3. For a thicker dip, reduce the processed cheese to 8 oz. To keep it dippable longer, add up to ⅓ cup of milk as it cooks.
  4. Transfer the dip to a serving bowl or keep warm in a small slow cooker.
  5. Serve with tortilla chips, crackers, or sliced baguette.
