Description

Shepherd’s pie is a classic British casserole featuring a savory meat filling topped with creamy mashed potatoes, perfect for family dinners, holiday meals, or as a homemade comfort food. Easily paired with crusty bread, green salads, or roasted vegetables.


Ingredients

For the Meat Filling:

– 2 tbsp olive oil

– 1 cup chopped yellow onion

– 1 lb lean ground beef or lamb (substitute ground turkey, chicken, or plant-based meat for dietary needs)

– 2 tsp dried parsley

– 1 tsp dried rosemary

– 1 tsp dried thyme

– ½ tsp salt

– ½ tsp black pepper

– 1 tbsp Worcestershire sauce (substitute soy sauce or tamari for variety)

– 2 cloves minced garlic

– 2 tbsp all-purpose flour (substitute gluten-free flour if needed)

– 2 tbsp tomato paste

– 1 cup beef broth (substitute vegetable broth for vegetarian diets)

– 1 cup frozen mixed peas and carrots

– ½ cup frozen corn kernels

For the Potato Topping:

– 1½–2 lbs Russet potatoes, peeled and cubed

– 8 tbsp unsalted butter

– ⅓ cup half-and-half (substitute milk or cream for variety)

– ½ tsp garlic powder

– ½ tsp salt

– ¼ tsp black pepper

– ¼ cup parmesan cheese


Instructions

  1. Heat olive oil in a skillet over medium-high heat. Add onions and cook for 5 minutes.
  2. Add ground beef or lamb, breaking it apart with a spoon. Stir in parsley, rosemary, thyme, salt, pepper, Worcestershire sauce, and garlic. Cook until browned.
  3. Add flour and tomato paste, stirring until smooth. Pour in broth, peas, carrots, and corn. Simmer for 5 minutes. Set aside.
  4. Preheat oven to 400°F while preparing the potato topping.
  5. Boil peeled and cubed potatoes until fork-tender. Drain and return to the pot to evaporate excess moisture.
  6. Mash with butter, half-and-half, garlic powder, salt, and pepper. Stir in parmesan cheese.
  7. Spread the meat mixture evenly in a 9×9-inch baking dish. Spoon the mashed potatoes on top and spread into an even layer.
  8. Place on a rimmed baking sheet if necessary. Bake uncovered for 25–30 minutes.
  9. Cool for 15 minutes before serving.

Notes

– Use lean ground beef or lamb for maximum flavor without excess grease. Substitute plant-based ingredients for vegan diets.

– Store leftovers in an airtight container in the fridge for up to 3–5 days. Freeze portions in freezer-safe containers for up to 3 months. Reheat in the oven or microwave.
