Description
Slow cooker honey mustard chicken is a comforting, hands-off meal featuring tender chicken breasts simmered in a sweet and tangy honey mustard sauce. This dish is perfect for busy weeknights or effortless meal prep. It is ideal for family dinners, potlucks, or as a make-ahead dish that fills your home with an incredible aroma. Naturally adaptable, this recipe pairs beautifully with rice, roasted vegetables, or a fresh green salad.
Ingredients
or the Chicken and Sauce:
– 2 lb boneless skinless chicken breasts (pat dry)
– ½ cup honey
– ⅓ cup Dijon mustard
– 2 tbsp whole grain mustard
– 2 tbsp apple cider vinegar
– 3 cloves minced garlic
– ½ tsp paprika
– ½ tsp onion powder
– ½ tsp kosher salt
– ¼ tsp black pepper
For the Thickener:
– 1 tbsp cornstarch
– 1 tbsp water
Instructions
In a medium bowl, whisk together the honey, Dijon mustard, whole grain mustard, apple cider vinegar, minced garlic, paprika, onion powder, kosher salt, and black pepper until completely smooth.
2. Place the chicken breasts in the bottom of the slow cooker in a single layer. Pour the honey mustard mixture evenly over the top, turning the chicken slightly to ensure every piece is well coated.
3. Cover the slow cooker with its lid. Cook on Low for 4 to 5 hours or on High for 2 to 3 hours. The chicken is done when it reaches an internal temperature of 165°F.
4. Transfer the cooked chicken to a plate. Whisk the cornstarch and water together to form a slurry. Stir the slurry into the remaining sauce in the slow cooker.
5. Cover and cook on High for 10 to 15 minutes until the sauce thickens slightly. Return the chicken to the cooker, spooning the thickened sauce over the top.
6. Serve the breasts whole, or shred them directly in the sauce for a pulled chicken texture.
Notes
– Use a meat thermometer to prevent overcooking and ensure the chicken remains incredibly juicy and tender.
– Always pat the chicken breasts dry with a paper towel before adding them to the slow cooker to help the sauce adhere better.
– Store leftovers in an airtight container in the refrigerator for up to 3 to 4 days. Freeze for up to 3 months. Thaw overnight in the refrigerator before reheating gently in the microwave or on the stovetop.
