Description
Small batch salted caramel sauce is a rich, creamy caramel infused with flaky sea salt for a perfect balance of sweetness and savory notes. Perfect for drizzling over desserts like ice cream, brownies, or pancakes. Easily made vegan or low-sugar.
Ingredients
For the Sauce:
– ½ cup granulated sugar (substitute monk fruit or erythritol for low-sugar diets)
– 1 tbsp water
– 2 tbsp unsalted butter (substitute plant-based butter for vegan option)
– ¼ cup heavy cream (substitute coconut cream or half-and-half if needed)
– ¼ tsp flaky sea salt (adjust to taste; use smoked salt for variety)
Optional Add-ins:
– ½ tsp vanilla extract (or a splash of bourbon for extra depth)
– Cinnamon, cardamom, espresso powder, or orange zest (for added complexity)
Instructions
- In a small saucepan over medium-high heat, whisk together sugar and water. Bring to a boil and cook until the sugar dissolves (about 1 minute).
- Reduce heat to a simmer. Add butter and whisk until fully combined. Simmer until the mixture turns a deep amber color (about 5 minutes).
- Remove from heat and carefully whisk in heavy cream (it will bubble up vigorously). Whisk until smooth and well combined.
- Whisk in flaky sea salt and, if desired, a dash of vanilla extract or bourbon for extra depth.
- Pour the caramel into a heatproof jar. Allow it to cool slightly before using or storing.
Notes
– Monitor caramel closely: Use a light-colored saucepan to monitor the caramel’s color change accurately. Avoid stirring during the boiling phase to prevent crystallization.
– Adjust consistency: If the caramel feels too thick, add a splash of cream to thin it out.
– Storage: Store leftover caramel sauce in an airtight container in the fridge for up to 2 weeks. Freeze portions for longer storage; thaw overnight in the fridge and reheat gently with a splash of cream. Avoid leaving the sauce at room temperature for extended periods.
– Customizations: Add cinnamon, espresso powder, or orange zest for variety. Sprinkle toasted coconut or drizzle melted chocolate on top for extra flair.
