Description

Stuffed zucchini boats are a delicious, vegetable-forward alternative to traditional heavy pasta dishes. Fresh, medium-sized zucchini are hollowed out and filled with a savory, hearty mixture of browned ground beef or turkey, aromatic onions and garlic, diced tomatoes, and a binder like cooked rice or breadcrumbs. Topped with a generous layer of melted mozzarella and Parmesan cheese, these boats bake until the zucchini is perfectly tender and the cheese is beautifully golden. It is a fantastic way to enjoy a comforting, cheesy meal while keeping your carbohydrate intake low and your vegetable consumption high.

For the Zucchini Base:
4 medium zucchini

For the Savory Filling:
1 tbsp olive oil
½ cup finely chopped onion
2 cloves garlic, minced
½ lb ground beef or ground turkey (or plant-based meat alternative)
1 diced tomato
½ cup cooked rice or breadcrumbs (substitute quinoa or cauliflower rice for low-carb)
1 tsp Italian seasoning
Salt and pepper (to taste)

For the Cheesy Topping:
½ cup grated Parmesan cheese
½ cup shredded mozzarella cheese


Instructions

1. Prepare the zucchini: Preheat your oven to 375°F (190°C). Wash the zucchini and slice them in half lengthwise. Using a spoon or a melon baller, carefully scoop out the insides to create a hollow boat shape, leaving about a ¼ inch of flesh around the skin to hold the structure. Finely chop the scooped-out zucchini flesh and set it aside for the filling.

2. Cook the filling base: Place a large skillet over medium heat and add the olive oil. Add the finely chopped onion and minced garlic. Sauté until soft and fragrant.

3. Brown the meat: Add the ground beef or turkey along with the chopped zucchini flesh to the skillet. Cook until the meat is fully browned and no longer pink, breaking it up into small crumbles as it cooks.

4. Combine the filling: Stir the diced tomato, cooked rice or breadcrumbs, Italian seasoning, salt, and pepper into the skillet. Cook for a few more minutes, allowing the flavors to meld and the excess liquid from the tomatoes and zucchini to evaporate slightly.

5. Stuff the boats: Spoon the hearty meat and vegetable mixture generously into the hollowed-out zucchini boats. Pack the filling down tightly so it mounds slightly above the zucchini skin. Place the stuffed boats snugly into a baking dish.

6. Add cheese and bake: Sprinkle the tops of the stuffed zucchini evenly with the grated Parmesan and shredded mozzarella cheeses. Place the baking dish in the preheated oven and bake for 25 to 30 minutes. The dish is ready when the zucchini skins are tender when pierced with a fork and the cheese is melted and bubbly.

7. Rest and serve: Let them cool for a few minutes before serving to allow the filling to set.

Notes

Prevent a Soggy Bottom: Zucchini releases a lot of water when cooked. Make sure to cook the filling in the skillet long enough to evaporate the excess liquid. You can also sprinkle the inside of the raw boats with a little salt, let them sit for 10 minutes, and pat them dry with a paper towel before stuffing.

Do Not Overbake: The zucchini will continue to cook in the oven while the cheese melts. Check for doneness at the 25-minute mark. You want the skin to be tender but still holding its shape, not completely collapsed.

Let It Rest: Allow the stuffed zucchini to cool for about 5 minutes after taking them out of the oven. This resting period allows the filling to set slightly, making it much easier to transfer them to a plate without the filling spilling out.

Toast the Breadcrumbs: If you choose to use breadcrumbs instead of rice, lightly toast them in a dry pan before adding them to the skillet. This adds a wonderful nutty flavor and helps them absorb moisture without turning to paste.

Storage & Reheating: Store leftovers in an airtight container in the refrigerator for up to 3 days. These boats freeze exceptionally well; wrap individually and freeze for up to 2 months. Reheat in the oven or air fryer at 350°F for 10 to 15 minutes to maintain the best texture.
