Instructions

2. Prepare the sweet potatoes: Peel and boil the sweet potatoes in a pot of water until fork-tender. Drain them very well and mash them thoroughly until completely smooth. Allow them to cool slightly so they do not scramble the eggs later. (Note: If using canned puree, ensure it is 100% pure and drain any excess liquid before measuring).
3. Mix the wet ingredients: In a large mixing bowl, combine the mashed sweet potatoes, almond butter, pure maple syrup, eggs, and vanilla extract. Stir vigorously until the mixture forms a uniform batter.
4. Add the spices: Add the freshly grated ginger, ground cinnamon, ground nutmeg, ground cloves, and salt to the wet mixture. Mix well to ensure the spices are evenly distributed.
5. Incorporate the leavening agent: Sprinkle the baking soda evenly over the top of the batter. Gently fold it in using a spatula until just incorporated. Do not overmix.

Adjust Sweetness: Sweet potatoes naturally vary in their sugar levels. Taste your mashed potatoes before adding the maple syrup; if they are exceptionally sweet, you can reduce the maple syrup slightly.
Storage: Store leftover cake in an airtight container at room temperature for up to 2 days, or in the refrigerator for up to 5 days. It also freezes beautifully for up to 3 months (wrap individual slices tightly).
