Description

Zucchini oatmeal muffins are a delightful and wholesome baked treat that perfectly combine the hearty texture of rolled oats with the hidden nutritional benefits of fresh grated zucchini. For the Dry Base:
1½ cups all-purpose flour (or gluten-free all-purpose flour blend)
1 cup rolled oats (avoid steel-cut)
½ tsp baking soda
1 tsp baking powder
½ tsp salt
½ tsp ground cinnamon

For the Wet Ingredients:
½ cup granulated sugar
½ cup packed brown sugar
½ cup unsalted butter, melted (or dairy-free butter)
2 large eggs
1 tsp vanilla extract

For the Add-ins:
1½ cups packed grated zucchini (excess moisture squeezed out)
½ cup chopped walnuts or pecans (or sliced almonds/sunflower seeds for nut-free)
½ cup raisins or chocolate chips (optional)


Instructions

1. Prep the oven and pan: Preheat your oven to 350°F (175°C). Line a standard 12-cup muffin tin with paper liners or lightly grease with nonstick spray.

2. Mix the dry ingredients: In a large mixing bowl, whisk together the all-purpose flour, rolled oats, baking soda, baking powder, salt, ground cinnamon, and ground nutmeg until evenly distributed.

3. Combine the wet ingredients: In a separate medium bowl, beat together the granulated sugar, packed brown sugar, melted unsalted butter, large eggs, and vanilla extract. Whisk vigorously until smooth.

4. Merge the mixtures: Gradually add the wet ingredients into the dry ingredients. Stir gently until just combined, being careful not to overmix.

5. Fold in the add-ins: Gently fold in the packed grated zucchini, chopped nuts, and raisins or chocolate chips until evenly distributed throughout the thick batter.

6. Portion and bake: Divide the batter evenly among the 12 prepared muffin cups, filling each about three-quarters full. Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean.

7. Cool: Allow the muffins to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.

Notes

Grate and Squeeze the Zucchini: Always grate the zucchini on the large holes of a box grater. Crucially, place the grated zucchini in a clean kitchen towel and squeeze gently but firmly to remove excess water. Skipping this step will result in soggy, dense muffins.

Do Not Overmix: When combining the wet and dry ingredients, stop mixing as soon as the flour streaks disappear. Overmixing leads to dense, rubbery muffins.

Measure Flour Correctly: To avoid dry muffins, spoon the flour into your measuring cup and level it off with a knife. Scooping directly from the bag can pack the flour.

No Need to Peel: You do not need to peel the zucchini before grating. The skin is edible, softens during baking, and adds extra fiber and nutrients.

Storage: Store cooled muffins in an airtight container at room temperature with a paper towel to absorb moisture for up to 3 days, or in the refrigerator for up to a week. They can also be wrapped individually and frozen for up to 3 months.
